Cornflake Tart Recipe...

I'd been craving this old school classic for week and oh baaaaby it was good! I think study leave and exams have left me so nostalgic about all the good things about school aka the desserts at lunch time. So i just had to make this for myself and here's how you can too.

What You'll Need

  • One sheet of ready-rolled shortcrust pastry (or you can make your own!)
  • 115g of golden syrup
  • 85g of cornflakes
  • 55g of butter
  • 25g of dark brown soft sugar
  • a pinch of salt
  • 100g of strawberry jam which you need to warm slightly
My tart served about 6 people, but you can adjust these measurements to suit. 

What To Do

1)You need to preheat your oven to 200 degrees.

2)If you're making your own pastry then you need to do that, but if you're using ready-rolled like I did you simply need to line a quiche dish (or any round dish that's big enough) with the pastry and trip off the excess.

3)prick the base of the pastry with a fork before placing some foil over it and pouring in baking weights (If you don't have any baking weights, I used an oven-proof dish and it worked just the same). Then place that into the oven for 20 minutes until golden, if it's taking much longer than that then you can remove the foil and weights. 

4)In a large saucepan melt the butter, sugar, syrup and salt. Once it has all dissolved and mixed together, add in the cornflakes and ensure that they're fully coated in the syrup mixture. 

5)Once the pastry is done, warm the jam in the microwave before spreading it across the base of the tart. You can really adjust this to taste but it does help the cornflakes stick to the pastry (and is yummy!)

6)Bake the tart for an extra 5 minutes just to crisp the top slightly and then allow to cool before serving.
